The bakery chain originating from the Cornish village of Mevagissey is set to launch its debut location in Oxfordshire this month.

Cornish Bakery will open its first Oxfordshire establishment in Witney.

The business intends to occupy 11 Market Square, previously a Shoe Zone location, positioned alongside Coffee #1, Gails, and an additional independent café.

In February, the company revealed plans to open seven new locations at the beginning of the year, encompassing their inaugural Welsh store.

Each upcoming bakery will showcase a fully customized design approach, featuring distinctive colours, textures, and architectural elements. These will be meticulously designed to complement the specific building, the area’s historical character, and the local community—a characteristic element of every Cornish Bakery opening.

The new locations form part of the rollout for ‘RISE by Cornish Bakery’.

This launch represented a strategic shift from their conventional coffee and baked goods concept, incorporating additional small plate options intended for brunch, lunch, and early evening meals.

Stores in Newbury, situated across the county boundary in Berkshire, as well as Lincoln, commenced operations in March.

Their most expansive location to date in Betws-y-Coed, marking their Welsh debut, opened during the previous month.

A substantial investment of £3.5 million will support the new locations, complemented by an additional £500,000 allocated for renovating four existing bakeries situated in West Bay, Lyme Regis, Amgleside, and Bourton-on-the-Water.

Managing director Mat Finch stated the company intends to pursue additional openings this year alongside major renovations of current bakery sites.

The chain had been scheduled to assume control of a Pret A Manger location near Carfax in Oxford, however confirmed in January that this arrangement would not proceed.
